Appetizer rolls with bacon and mozzarella


Cut the bacon into thin slices (that's how I bought it), then into cubes and fry in a little oil.

Mix the flour with the baking powder. Add salt, whipped milk and mix. The result will be a soft, slightly sticky dough. It is divided into two parts. Use plenty of flour when rolling out the dough. On the first part, put the tomato paste, oregano, bacon and grated mozzarella and roll. Cut the fruit and place it in the tray. They will not have a very pleasant appearance, being a soft dough, but in the oven they will swell and look better.

Do the same with the second part of the dough.

Bake in the preheated oven for 25 minutes, maximum 30 minutes.


Method of preparation

We connect the Panini Maker Breville device to a power source.

In a bowl, mix eggs, salt. Add the yogurt, milk and mix. At the end we add the flour, mixing with a pear, until the composition is homogenous.

Carefully open the lid of the appliance, and with the help of a polish, pour a disk of dough, leave for a few seconds, then gently close the lid of the Panini Maker Breville appliance and let it bake for about 20 seconds. Remove the lightly browned pancake on a plate. We do the same with the rest of the composition. We will get about 8-10 pancakes that we put aside.

Prepare a tray with baking paper and turn on the oven.

Cut the bacon into cubes, and the cheese into sticks about the size of a finger. Break and beat an egg in a bowl.

Mix the breadcrumbs with a little of each spice.

We take a pancake, place a cheese stick in the middle, a little bacon and roll, bending the side edges, like a closed roll. Do the same with the rest of the pancakes.

Pass each pancake through a beaten egg, then through the breadcrumbs, and place it in the pan. Sprinkle 2-3 tablespoons of olive oil over the rolls and bake them over high heat for about 7-8 minutes.

Ingredients (12 pieces)

  • 2 pieces chicken breast
  • 150 - 200 gr. bacon
  • 6 poultry livers (12 lobes)
  • 10 - 12 tablespoons mustard
  • Gras red bell peppers
  • 5- 6 strands of green parsley
  • 10 teaspoons sweet soy sauce
  • 3-4 tablespoons olive oil
  • salt, pepper (other spices for chicken, as desired)

Method of preparation

-Wash and cut the chicken breast into 12 pieces (about the width of a palm) thinner, as for schnitzels. They are beaten with a hammer, seasoned with salt, pepper (and other favorite spices for chicken), grease with olive oil, roll and leave to cool in the refrigerator for approx. 30 minutes, until we finish preparing the other ingredients.

-Clean, wash the liver well, leave a little (10 -15 minutes) in cold water to leave the blood well, then boil with a little salt. (I boiled all the livers from a tray of about 600 gr., I chose 12 beautiful and good-looking lobes that I used for this preparation, and I put the rest so boiled in the freezer and I prepared another date).

-In the meantime, clean, wash the bell pepper and cut it into very thin slices, and wash the parsley.

-After the livers have boiled, leave to cool, then season with salt and pepper.

-Spread the pieces of chicken breast on the worktop, season with salt, pepper and with a brush spread a thin layer of mustard on each piece.

-Put the green parsley on each piece of chicken breast, then a very thin slice of bacon, grease it with a thin layer of mustard, place the pepper slices (in the direction of travel), then a lobe of boiled liver at each roll.

-Run as close as you can (be careful, however, that the contents of the roll do not come out) however leaving the ends light and catching with 2 & # 8211 3 toothpicks each roll so as not to fall apart, after which it is placed in a vertical position in the special muffin tray greased with very little oil.

-After all the rolls are ready, they are greased with very little olive oil.

-Put the tray in the preheated oven at 200 ° C for approx. 15 minutes, or until the rolls start to brown a little.

-Remove the tray from the oven and use a brush to grease each roll, in abundance, with sweet soy sauce (for the rolls to caramelize nicely), then continue baking for another 5-7 minutes, until our roses caramelize on the edge.

-When ready, leave to cool in the form of muffins.

-After they have cooled, remove the toothpicks and place them on a bed of lettuce on the serving platter.


Method of preparation

First we boil the chicken breast in water with a little salt, then we grind it in the robot.

We boil the Mexican vegetables for 15 minutes in salted water, directly frozen, then drain them well.

I prepared the rice for multicooker on the RICE program, seasoned with a pepper powder, a thyme powder, a teaspoon of salt and a teaspoon of sugar and a bay leaf.

If we don't have a multicooker, we boil it on the stove, but we are careful not to stick it.

Mix the vegetables with the chicken breast, add the yolks and sour cream over them and finally the rice mixed with the egg whites.

Lightly homogenize the composition and season it with spices, if necessary.

Grease the muffin tins with a little olive oil and fill them with the resulting mixture.

We place them in a tray and put them in the oven for 35-40 minutes at 180 degrees.

Slice the thinner mozzarella, one slice for each muffin.

Cut the dehydrated tomatoes into smaller pieces, as well as the donut pieces.

10 minutes before turning off the heat, take the muffins out of the oven and place a slice of mozzarella and pieces of donut and tomatoes on them.
