The first time we deal with maya.

Chop the yeast, put it in a bowl, add sugar, salt powder, add a little milk to soften and mix gently.

Then add the 2 tablespoons of flour, mix and leave to rise for 15 minutes.

In a large bowl put sifted flour, eggs, sugar and mayonnaise.

We start to knead by gradually adding the milk mixed with water.

We get a homogeneous dough.

Then add the oil and knead well for 10-15 minutes, until the oil is incorporated into the dough.

Then let the dough rise in a warm place for 1-2 hours or until it doubles in volume.

When the dough has risen, take it out on the floured table and knead a little more so that the air comes out of it.

Then take a piece of dough and spread it in a thin string that we weave in 2, then join the ends.

The result is a round coil, which we cross, thus obtaining an 8-shaped coil.

After we have done the martyrs, we place them in a tray lined with baking paper, cover them with a clean towel and leave them to rise for another 15 minutes.

After they have risen, grease them with the egg and milk mixture and then put the tray in the preheated oven until the martyrs are nicely browned on top.

In the meantime, we're dealing with the syrup. Boil the water with the sugar and let it boil for 2-3 minutes.

Turn off the heat and add the vanilla essence.

When the martyrs are done, take the tray out of the oven and let it cool.

After they have cooled, we take each martyr separately and pass it through the warm syrup.

We take them out on a tray and let them soak well for 10 minutes.

Then grease them with honey mixed with 3 tablespoons of warm water, then sprinkle ground walnuts on top.

They are extremely good, super fluffy and fragrant!

Enjoy your meal!!

March 9 is the day of the 40 saints. In Moldova some baked martyrs (saints) are prepared that are so fluffy, syrupy and delicious that you can't refuse them. I grew up with Moldavian martyrs at home, but my mother often made us the recipe for Martyrs of Muntenia. And now, like my mother, I have come to prepare both recipes every year. There is also a recipe for Moldavian martyrs fasting, and I managed to prepare it and posted it on the plug. You can read it too here.

According to tradition, I should prepare 40 martyrs. I have never done this before! My mother didn't either! And, also according to tradition to drink 40 glasses. This habit is a bit difficult to complete. A glass of wine, it still works, but 40 seems impossible to me!

Divide the dough into equal pieces, about as long as it fits in one hand. Spread each piece of dough into a thin, long string. Fold it in half, then twist the two pieces together and overlap them to form an eight.

After weaving, it is placed directly in the tray and left to rise. Mucenicii Modovenesti & # 8211 Sfintisorii bake for a maximum of 30 minutes in the preheated oven at 180 ° C on ventilation, during which time the syrup is prepared.

I don't find it hard to be a martyr at all. I like to play with dough.

Moldavian Martyrs (Saints)

If I still celebrated yesterday the 40 Holy Martyrs of Sevastia, I said to keep the tradition and I prepared martyrs or saints at home as we call them, so I will continue to share the recipe with you.

So fragrant and fragrant that you have to try them.

& # 8211 salt, flour as it contains (approx. 1 kg)

& # 8211 1 rum essence, vanilla sugar

We first take care of the dough: we mix the yolks with sugar, soft butter, vanilla sugar, salt, then we add the milk and warm water, the dissolved yeast, we put a little flour, we let it bubble for 10 minutes, then we add the flour gradually and knead until we get a elastic and sticky dough, which we leave to rise for about 1 hour. Meanwhile, prepare the syrup: boil the water with the sugar, let it boil for 10 minutes, turn it off, add the rum and vanilla sugar, and leave it to cool. After the dough has risen, we portion it, shape and weave the saints in the shape of 8. Let them rise in the pan for another 20-30 minutes, and put them in the oven on the right heat for 30-35 minutes, until they brown nicely.

After they are ready, take one hot one and put it in syrup, on both sides, grease it with honey, then sprinkle with walnuts or coconut, depending on your preferences. This is what we do with all the saints.

Serve cold, to have time for the honey, nuts and syrup to intertwine. They have a tender and slightly moist texture. I go great with a glass of milk.

How we weave Moldovan martyrs

From the mentioned quantities came 4 Moldavian martyrs, so to weave them we will need 8 pieces of dough approximately equal.

On the kitchen counter I put a few tablespoons of oil, and on top of them I poured the raised dough.

I cut the dough into 8 slices, as you can see in the picture below, then I gave each piece a spherical ball shape.

Each ball of dough turns into a long tube of dough, rolling it lightly on the table surface using your palms. My tubes were approx. 50 cm long, then every 2 tubes are taken and & # 8220weave together & # 8221, after which their ends are joined, taking the shape of the letter & # 8220O & # 8221, at the end the letter is twisted 1 time to take the shape of the letter 8, then the # 8201 knitted martyr is placed in the oven tray (I also put some baking paper in the tray).

The process is repeated until you finish knitting all the dough. The martyrs are left to rise for another 30-45 minutes in the tray.

Turn on the oven at 180 degrees Celsius and leave to heat.

Grease the martyr with beaten egg (or beaten egg with milk), then bake for 45 minutes at 180 degrees Celsius.

Moldovan martyrs stuffed with walnuts. Syrupy and fluffy saints!

Moldovan martyrs stuffed with walnuts and shit & # 8211 recipe for syrupy and fluffy saints
Martyrs stuffed with walnuts. Stuffed Moldavian martyrs. Syrian Moldavian martyrs. Moldovan martyrs when they are made. Fluffy Moldavian martyrs with honey. Moldovan fluffy sweet martyrs for March 9. 40 martyrs, macinici, bradosi or baked saints in the form of 8 of fasting dough.

This year (2019) the day of March 9, in which, according to popular tradition are prepared and given as alms martyrs (saints) fell out of fasting. So I prepared Moldovan martyrs from a fruit dough, ie with eggs and milk.

Like last year I tried the martyrs stuffed with fasting walnutsee the recipe here & # 8211 this year I said it wouldn't hurt to try the same variant stuffed Moldavian martyrs but, this time made from a cake-like dough. In addition, I added a few pieces of shit to the filling.

My little boy loves shit and we often make cake filled with walnuts and shit. So I said it wouldn't hurt to try to make martyrs stuffed with walnuts and shit. A kind of mini cake but in the shape of the letter 8.

We even tried another way to form the number 8. Usually we make them knitted or simply forming that 8 from a circle turned and superimposed, as I explained in the other recipes of martyrs which I have published over time on the site & # 8211 see HERE or HERE.

See below how to boil in the aromatic syrup and the Wallachian martyrs

This time I rolled one end of the stick inwards to the middle and did the same with the other side but in the opposite direction. I formed in this way a kind of "S" united in the middle, as can be seen in the picture. I find it easier to do so than braided.
