Stew with vegetables and pork

Stew with vegetables and pork

We heat the vegetables: finely chopped onion, chopped julienne pepper and grated carrot. I had carrots mixed with grated peppers from the freezer.

Let them cook for 6-7 minutes, then add 1 cup of water and diced potatoes. Add the fried meat separately. Fill with water and let it boil, approx. 25-30 minutes, then add tomato paste, Maggi and pepper to taste.

Leave it on the fire for another 15 minutes, and before extinguishing the tochitura fire, add the chopped dill.

Good appetite!

Re: Philippine pork and chicken stew

I made it (only with pork) and adjusted the amounts of sauces to my taste. It's insane and the rice vinegar in the sauce is very "refreshing". I also had surprising-positive assessments regarding the taste. From now on, it is clearly one of my favorite recipes to prepare easily after a long day at work

Re: Philippine pork and chicken stew

Servus, I've been reading your recipes for a long time and I really like them. Now I would like to try this recipe but I did not find rice vinegar or oyster sauce. Can't rice vinegar be replaced with anything? I see oyster sauce as optional. If I try the recipe without rice vinegar, the food will turn out ok, I mean almost as a taste of your recipe?

Ioana 5 years ago - 3 May 2012 15:29

Re: Philippine pork and chicken stew

use only white wine vinegar.
although you can find rice vinegar (rice vinegar) at Cora, Selgros, Carrefour (in the district with international products)

no, the sauce has to go down.
just be careful to keep the fire low, otherwise it drops too fast.

can I use a duck breast instead of chicken?

Ioana 4 years ago - 11 March 2013 13:06

Re: Philippine pork and chicken stew

there is no point in putting the duck breast in stews. it is better to make it on the grill or in the oven, it is done in a very short time. some duck legs would be more appropriate.

Re: Philippine pork and chicken stew

ok, something else instead of soy sauce, I can use something that can be found here and I still have it in the house, it's a soy sauce but it also has molasses, it's very dark in color almost black and it's sweet

Ioana 4 years ago - 11 March 2013 14:37

Re: Philippine pork and chicken stew

I don't know exactly what the sauce is like, but if the stew comes out too sweet, add more vinegar.

Re: Philippine pork and chicken stew

can fish sauce be used instead of oyster sauce? I think it's the same thing. Thank you

Ioana a year ago - 6 October 2016 11:24

Re: Philippine pork and chicken stew

it's not the same thing. oyster sauce is as dark as soy sauce, and thick as honey. it is sweet and the aroma is finer than that of the fish, which is much saltier, has a liquid consistency and an intense taste like fermented anchovies. they are two very different sauces.
oyster sauce is optional. eventually you can replace it with 1 tablespoon of soy sauce and 1 teaspoon of sugar if you do not have oyster sauce.

That's why I asked (and I'm still asking you) to see more portions. I put double (because I want to make 6-8 servings of Filipino from this)

Re: Philippine pork and chicken stew

Did you put 400 g of canned tomatoes or 800 gr double?

The recipe uses mushroom powder (dried mushrooms ground in a food processor / coffee machine) to add a mushroom flavor to the sauce. she should have felt pretty good.

when doubling the quantities, take care of the tray / pot as well. the evaporation surface matters. to double my recipes you need wider pans to get the same result in terms of sauce consistency.
the narrower the pan, the slower the liquid will evaporate. the wider it is, the faster it decreases.
if you duplicated the recipe and used a tray similar to mine, the sauce may not have dropped enough in the time indicated in the recipe.
also when you put a double quantity tray in the oven, you should add 10 minutes to the baking time, because the contents reach the set temperature more slowly.

with this recipe you should have no problems if you double the quantities. in step 4, boil on medium until it drops into a suitable sauce (not thick, but somehow viscous). even if it lasts more than 20 minutes, follow the consistency of the sauce.

if you find Japanese soy sauce it would be great, it tastes better in this recipe.
